Crostini with Roasted Garlic, Onion Jam, Brie & Prosciutto

INGREDIENTS

  • Black Wattle Preserves' Caramelised onion jam

  • French Baguette, cut into 3/4 inch slices on the bias

  • 1/2 cup olive oil

  • 2 tbsp garlic (plus heads)

  • sprinkle of parmesan cheese on each crostini

  • 2 heads of garlic or Black Wattle Preserves Confit Garlic

  • Extra Olive oil

  • Round of Brie

  • 7-8 pieces of prosciutto

  • Fresh thyme for garnish



METHOD

  1. Preheat oven to 170 degrees celcius, slice french stick. Mix garlic and parmesan cheese with olive oil (we recommend finally grated fresh garlic). Brush onto both sides of the bread. Place on a baking tray and bake until they start to golden. Once they start to golden, flip them over and repeat (this is about 5 minutes each side) Set aside

  2. To roast the garlic, turn the oven up too 200 degrees celcius. Cut tops off garlic heads, place on a square of alfoil and drizzle with olive oil and season if desiered. Wrap and roast for approx 35 minutes or until they feel soft. Pull them out and let them cool. (This step can be done ahead of time, or you can use Black Wattle Preserves Confit Garlic)

  3. Crisp up prosciutto in a large skillet on medium-high heat. This will only take a minute or two on each side. You don't want them crumbling. Remove from heat, and cut into sizes similliar to the baked crostini. Set aside.


TO ASSEMBLE

  1. Firstly cut up brie into long strips, then into 2 inch pieces or so.

  2. Take crostini pieces and a clove of garlic and smear garlic on each piece, next put on a peice of cripsy prosciutto, followed by a slice of brie. Top all that off with a generous tablespoon of onion jam (you can heat this up) Garnish with a sprig of thyme.
